- Preheat Oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream Butter & Sugar: In a large bowl, cream together the softened butter and sugar substitute until light and fluffy. Add pumpkin, egg, and vanilla, and mix until smooth.
- Mix Dry Ingredients: In a separate bowl, whisk together whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Bake Cookies: Drop spoonfuls of dough onto the prepared baking sheet. Bake for 10-12 minutes, or until the edges are lightly golden. Cool completely.
- Make Frosting: Beat together the softened butter and reduced-fat cream cheese until smooth. Gradually add powdered sugar substitute and vanilla, beating until creamy.
