  • Cream Butter & Sugar: In a large bowl, cream together the softened butter and sugar substitute until light and fluffy. Add pumpkin, egg, and vanilla, and mix until smooth.
  • Mix Dry Ingredients: In a separate bowl, whisk together whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  • Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
