2. Creamy Baked Broccoli with Tomatoes and Kale Directions

  • Preheat the oven to 375°F (190°C). Lightly spray a baking dish with cooking spray.
  • In a large bowl, combine the broccoli, cherry tomatoes, and chopped kale. Toss to mix.
  • In a separate bowl, mix the fat-free Greek yogurt, reduced-fat cream cheese, minced garlic, and Italian seasoning. Season with salt and pepper.
  • Stir in half of t< he Parmesan cheese and half of the shredded mozzarella cheese until well combined.
  • Add the creamy sauce to the vegetables, mixing until evenly coated.
  • Transfer the mixture to the prepared baking dish. Sprinkle the remaining Parmesan and mozzarella cheese on top.
  • Bake for 20-25 minutes, or until the cheese is melted and bubbly, and the vegetables are tender.
