2. Low-Point Tomato Basil Ricotta Pasta with Spinach Directions
- Bring salted water to a boil in a large pot. Add the whole grain pasta and cook according to package instructions until al dente (8-10 minutes). Drain and set aside, reserving a cup of pasta water.
- Heat olive oil in the same pot over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add diced tomatoes with their juices to the pot, season with salt, pepper, and crushed red pepper (if using). Simmer for 5-7 minutes.
- Stir in chopped spinach, cooking for 2-3 minutes until wilted. Add a bit of reserved pasta water if needed to adjust the sauce consistency.
- Mix the drained pasta into the sauce. Add spoonfuls of fat-free ric< otta cheese, gently folding it in.
- Stir in the chopped fresh basil and adjust the seasoning to taste.
- Divide the pasta into bowls, garnish with additional basil or pepper, and serve warm.
