2. Low-Point Corn Souffle Directions
- Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish.
- In a large bowl, combine the whole kernel corn, creamed corn, Greek yogurt, and melted light butter or applesauce. Stir until well mixed.
- Stir in the corn muffin mix and beaten eggs until just combined. If using, fold in the reduced-fat shredded cheddar at this stage.
