2. Lemon Crumb Bars Directions

Prepare the Crust & Crumb Topping:
- Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper.
- In a large bowl, whisk together the all-purpose flour, almond flour, sugar substitute, baking powder, and salt.
- Add the cold light butter cubes and unsweetened applesauce to the dry ingredients, blending until the mixture resembles coarse crumbs.
- Stir in the beaten egg and vanilla extract until the mixture starts to come together but is still crumbly.
- Press half of the crumb mixture into the bottom of the prepared baking dish to form the crust. Set aside the remaining crumb mixture for the topping.

Prepare the Lemon Filling:
- In a medium bowl, whisk together the sugar substitute and flour.
- Add the eggs, lemon zest, and lemon juice, whisking until smooth and well combined.
- Pour the lemon filling over the prepared crust.

Assemble & Bake:
- Sprinkle the remaining crumb mixture evenly over the lemon filling.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the lemon filling is set.
- Allow the bars to cool completely in the pan before cutting into squares.

Serve:
- Dust with powdered sugar substitute if desired and serve chilled or at room temperature.
