2. Lemon Crumb Bars Directions

  • Prepare the Crust & Crumb Topping:

    • Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper.
    • In a large bowl, whisk together the all-purpose flour, almond flour, sugar substitute, baking powder, and salt.
    • Add the cold light butter cubes and unsweetened applesauce to the dry ingredients, blending until the mixture resembles coarse crumbs.
    • Stir in the beaten egg and vanilla extract until the mixture starts to come together but is still crumbly.
    • Press half of the crumb mixture into the bottom of the prepared baking dish to form the crust. Set aside the remaining crumb mixture for the topping.
  • Prepare the Lemon Filling:

    • In a medium bowl, whisk together the sugar substitute and flour.
    • Add the eggs, lemon zest, and lemon juice, whisking until smooth and well combined.
    • Pour the lemon filling over the prepared crust.

  • Assemble & Bake:

    • Sprinkle the remaining crumb mixture evenly over the lemon filling.
    • Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the lemon filling is set.
    • Allow the bars to cool completely in the pan before cutting into squares.
  • Serve:

    • Dust with powdered sugar substitute if desired and serve chilled or at room temperature.
