2. Detox Southwest Soup Directions
- Heat the olive oil in a large pot over medium heat.
- Add the diced chicken and cook until no longer pink, about 5-7 minutes. Remove the chicken and set aside.
- In the same pot, add the chopped onion and cook until softened, about 3-4 minutes.
- Add the minced garlic and diced bell pepper, cooking for another 2-3 minutes until fragrant.
- Return the cooked chicken to the pot.
- Stir in the corn, diced tomatoes, black beans, chicken broth, and water.
- Add the ground cumin, smoked paprika, chili powder, garlic powder, onion powde< r, salt, and black pepper. Stir to combine.
- Bring the soup to a boil, then reduce the heat to low. Simmer for 20-30 minutes to let the flavors meld.
- If using, stir in the chopped cilantro and lime juice just before serving.
