2. Chili Con Carne Directions
- Heat olive oil in a large pot over medium-high heat. Add onions and cook until translucent, about 5 minutes. Add garlic and cook for 1 more minute.
- Add ground beef and cook until browned and fully cooked, breaking it apart with a spoon. Drain any excess fat if necessary.
- Stir in tomato paste, crushed tomatoes, and beef broth, and bring to a simmer. <
- Add chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and pepper. Stir well to combine and reduce heat to low. Simmer uncovered for 1 hour, stirring occasionally.
- Add kidney beans and pinto beans, simmer for another 30 minutes, allowing flavors to meld together.
- Adjust seasoning if needed. Serve with optional garnishes.
