2. 1 Point Egg Muffins Directions
- Preheat the oven to 375°F.
- Chop the ham, bell pepper, and onion as noted.
- Crack the eggs into a large bowl and whisk well. Add< the chopped ham, bell pepper, onion, salt, and pepper, and mix until well combined.
- Grease a muffin tin with avocado oil (or bacon fat), ensuring each section is well covered to prevent sticking. You can also use muffin tin liners if preferred.
- Spoon the egg mixture into the muffin tin, filling each section almost full (the eggs will puff up while cooking).
- Place the muffin tin in the oven and bake for 20 minutes, or until the muffins are fully cooked and slightly golden.
- Remove from the oven and allow the muffins to cool slightly before serving. These muffins can be refrigerated and stored for 4-5 days, making them great for meal prep.
