2. Zucchini Egg Cups Directions

  1. Preheat the oven to 400°F (200°C)< . Grease a muffin tin with cooking spray, and arrange a strip or two of zucchini around the rim of each well. Set aside.
  2. Wrap the grated zucchini in a dish towel or paper towels to remove any excess moisture. Place in a bowl with the red onion.
  3. Add the eggs, almond milk, feta cheese, salt, pepper, and oregano. Mix well to combine.
  4. Ladle the mixture into the muffin cups, filling each cup about three-quarters full.
  5. Bake for 30 minutes, or until almost set. Allow to cool for 15 minutes before unmolding and serving.
