2. WW-Friendly Crustless Tomato Pie Directions
- Slice the tomatoes and lay them on plates. Sprinkle lightly with salt and let sit for at least 10-20 minutes, up to 30 minutes.
- Lightly spray a small skillet with cooking spray and heat over medium-high. Add the onion and garlic, and sauté until the onions are soft (about 8 minutes). Transfer to a medium-sized bowl.
- Add the reduced-fat cheese, eg< gs, herbs, and pepper to the bowl. Stir to combine.
- Drain the water off the plates with tomatoes. Gently blot the tomatoes with a paper towel to soak up excess moisture.
- Arrange the tomatoes in a single layer on a greased pie pan. Top with about 1/4 cup of the cheese mixture. Repeat until all ingredients have been used, finishing with a layer of tomatoes. Sprinkle a little extra mozzarella cheese on top.
- Bake at 375°F (190°C) for 30-40 minutes, or until the edges are lightly browned.
- Let the pie sit for 5-7 minutes before serving to allow it to set.
