2. WW-Friendly Catalina Taco Salad Directions

  • Heat a large skillet over medium heat and spray with cooking spray. Add ground turkey and cook until browned, about 6-8 minutes, breaking it apart as it cooks. Drain any excess fat if needed. Add taco seasoning and ¼ cup water, then simmer for 5 minutes.
  • While the turkey is cooking, chop the lettuce, tomatoes, and onion (if using). Set aside in a large bowl.
  • In a mixing bowl, whisk together no-sugar ketchup, cooking spray, onion powder, apple cider vinegar, Worcestershire sauce, paprika, Swerve, salt, and pepper until well combined. Set aside.
  • In the large serving bowl, combine the cooked turkey, chopped vegetables, and shredded cheese. Toss gently to mix everything e< venly.
  • Crush the Quest nacho cheese chips and sprinkle them on top of the salad for added crunch.
  • Pour the prepared Catalina dressing over the salad and toss gently to coat all ingredients.
  • Divide the salad into four bowls. Top with a dollop of fat-free sour cream or non-fat Greek yogurt if desired.
