  • Thinly slice the sirloin steak for even cooking.
  • In a bowl, mix low-sodium soy sauce, Worcestershire sauce, beef broth, minced garlic, and grated ginger to make the marinade. Coat the steak with the marinade and let it sit for at least 30 minutes.
  • In a small bowl, mix cornstarch with water to create a slurry for later thickening.
  • Heat olive oil in a skillet and sear the marinated steak for 1-2 minutes on each side. Transfer the steak to the crockpot.
  • In the same skillet, sauté the onion and bell peppers until soft, then add the cherry tomatoes and cook for 2 more minutes. Add the vegetables to the cro< ckpot.
  • In a small bowl, whisk together low-sugar ketchup, rice vinegar, and brown sugar substitute. Pour over the steak and vegetables.
