  • In a 20 cm (8-inch) non-stick skillet, melt the light butter over low heat. Add the Stevia and stir until it forms a light caramel, about 5 minutes. Slice the bananas into rounds and arrange them evenly over the sweetened butter mixture. Let them cook for a few minutes until they soften and caramelize slightly.
  • In a mixing bowl, whisk the egg and Stevia until light and fluffy. Add the almond milk, salt, and vanilla extract, mixing until well combined. Sift together the whole wheat flour and baking powder, then gently fold them into the wet mixture. Stir in the unsweetened applesauce until the batter is smooth.
  • Pour the cake batter over the caramelized bananas in the ski< llet, spreading it evenly. Cover the skillet and cook on low heat for about 25 minutes. The low temperature ensures the cake bakes evenly without burning. After 25 minutes, check the cake by inserting a toothpick in the center. If it comes out clean, it’s ready; if not, cook for another 5 minutes.
  • Once baked, remove the skillet from the heat and let the cake cool slightly. Flip the skillet onto a plate, allowing the banana topping to be displayed on top. Serve warm or at room temperature.
