Lightly coat the inside of a 5- to 6-quart slow cooker with nonstick spray.
Spread the uncooked instant brown rice evenly over the bottom of the slow cooker.
Place the chicken breasts on top of the rice.
Pour the chicken broth evenly over the chicken and rice.
Add the sliced mushrooms, onion powder, and black pepper.
Cover the slow cooker with the lid and cook on LOW for 4 to 5 hours, until the chicken is cooked through, tender, and reaches 165°F.
Do not lift the lid during the first 3 hours so the rice can steam properly.
About 30 minutes before serving, stir in the frozen peas and carrots.

Spoon a little warm cooking liquid into the Greek yogurt and stir until smooth.
