  • Preheat your oven to 375°F (190°C). Spray a muffin tray with oil and set aside.
  • In a bowl, whisk together the almond milk and eggs until combined.
  • In another bowl, combine the flour, baking powder, garlic powder, salt, black pepper, and oregano.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Fold in all the cheeses, bacon, and chopped turkey pepperoni until evenly distributed.
  • Pour the batter into the prepared muffin tray, filling each cup about 2/3 full.
  • Top with a sprinkle of Italian seasoning if desired.
  • Bake for 20-25 minutes, or until the muffins are golden brown and firm to the touch.
  • Allow the muffins to cool slightly before serving. They are great on their own or served with marinara sauce.
