2. Low-Carb Cauliflower Stuffing Directions
- In a large skillet, melt the butter (or use cooking spray) over medium-high heat.
- Add the onion, celery, and carrots to the skillet, and sauté until the vegetables start to soften and onions become translucent, about 5-7 minutes.
- Add the chopped cauliflower and mushrooms to the skillet, and stir to combine all vegetables. Season with salt and pepper to taste.
- Continue cooking until the vegetables are tender, about 10 minutes.
- Stir in the parsley, rosemary, and sage, and mix well.
- Pour the vegetable broth into the skillet and cook until the broth is fully absorbed, and the stuffing is fork-tender.
- Taste and ad< just seasoning if needed. Remove from heat.
- Garnish with extra parsley and serve warm.
