2. Lightened Up Coffee Cake Directions
- Preheat your oven to 350°F (175°C). Spray a 9×9 pan with non-stick cooking spray and set aside.
- In a large bowl, whisk together the unsweetened applesauce (or nonfat yogurt), almond milk, white sweetener, egg, and vanilla. If using Greek yogurt and it looks too thick, add a bit more almond milk.
- Add the whole wheat flour, baking powder, and salt to the bowl, mixing gently. Be careful not to overmix.
- Pour half of the batter into the prepared pan.
- For the Cinnamon Swirl: In a small bowl, combine the light spray, bro< wn sugar sweetener, and cinnamon. Pour this mixture into the batter in the pan and swirl with a knife. Pour the remaining batter on top, spreading it over the cinnamon swirl.
- For the Crumb Topping: In the same small bowl, mix the light spray, whole wheat flour, brown sugar sweetener, and cinnamon until the mixture resembles coarse crumbs. Sprinkle this topping over the batter.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Store leftovers in an airtight container on the counter for up to 4 days. For longer freshness, refrigerate for up to 1 week or freeze for up to 3 months.
