- Begin by roasting garlic in its skins until soft, then pop out the cloves and chop them; set aside for later use.
- Heat olive oil in a pan over medium-high heat. Add the chopped onions and sauté until golden brown. Incorporate the bell pep< pers and mushrooms, cooking until tender.
- Stir in garlic powder, onion powder, Italian seasoning, smoked paprika, and chopped roasted garlic. Deglaze the pan with cooking wine, allowing the mixture to simmer and combine flavors.
- Transfer this mixture to an Instant Pot. Add the diced tomatoes, veggie broth, and pasta. Cook under high pressure for 5 minutes and use a quick release to maintain the perfect pasta texture.
- Once the pressure is released, stir in coconut milk, nutritional yeast, and fresh spinach. Replace the cover and let the pasta soak up the flavors for a few additional minutes.
- For those without an Instant Pot, cook on the stovetop. Cover and simmer until the pasta reaches your desired tenderness.
- Serve warm, garnished with fresh parsley or your favorite herbs.
