2. Zero Point Meatballs Directions
- Preheat your oven to 375°F (190°C) to ensure even cooking and a crispy exterior on the < meatballs.
- Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
- In a large bowl, combine the ground turkey or chicken, egg, garlic powder, onion powder, dried oregano, dried basil, salt, pepper, parsley, and Greek yogurt.
- Mix the ingredients until just combined without overmixing to keep the meatballs tender.
- Form the mixture into 16 meatballs (about 2 tablespoons each) and place them on the prepared baking sheet.
- Bake the meatballs for 20-25 minutes or until fully cooked (165°F/74°C internal temperature) and golden brown.
- (Optional) While the meatballs bake, heat the no-sugar-added tomato sauce in a saucepan with Italian seasoning and red pepper flakes, if using.
- Serve the meatballs with or without the sauce, as desired, over zucchini noodles, whole grain pasta, or in sandwiches.
