  • Preheat your mini waffle maker.
  • In a bowl, mix the shredded mozzarella, eggs, coconut flour, baking powder, garlic powder (if using), salt, and pepper until well combined.
  • Lightly grease the waffle maker.
  • Spoon a portion of the batter onto the center of the waffle maker and close the lid. Cook until the chaffle is golden brown and firm to the touch. Repeat for the remaining batter.
  • Season the ground chicken patties with salt and pepper. Grill or cook them in a skillet over medium-high heat until fully cooked.
