2. Pumpkin Spice Muffins Directions

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the pumpkin puree, Kodiak mix, eggs, baking soda, baking powder, cinnamon< , ginger, nutmeg, unsweetened applesauce, and Splenda Monk Fruit. Mix well until all ingredients are fully combined.
  • Line a muffin tin with paper liners or spray with non-stick cooking spray.
  • Pour the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
  • Bake in the preheated oven for 20 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the muffins to cool for a few minutes before transferring them to a wire rack.
