2. Pumpkin Spice Muffins Directions

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the pumpkin puree, Kodiak mix, eggs, baking soda, baking powder, cinnamon, ginger, nutmeg, unsweetened applesauce, and Splenda Monk Fruit. Mix well until all ingredients are fully combined.
  • Line a muffin tin with paper liners or spray with non-stick cooking spray.
  • Pour the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
  • Bake in the preheated oven for 20 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the muffins to cool for a few minutes before transferring them to< a wire rack.
