- In a medium bowl, dissolve the sugar-free lemon jello in boiling water. Let it cool for 5-10 minutes, until it thickens slightly.
- While the jello cools, mix 1 1/2 cups of the whole wheat cracker crumbs with the unsweetened applesauce in a medium bowl. Press the mixture into the bottom of a 9×13-inch pan. Set aside and reserve the remaining crumbs for topping.
- In another medium bowl, beat the chilled evaporated skim milk until it becomes whipped and fluffy, about 2-4 minutes.
- In a separate large bowl, beat together the fat-free cream cheese, erythritol, and lemon juice until smooth. Add the thickened jello into the cream cheese mixture, then gently fold in the whipped evaporated milk.
- Spread the filling evenly over the prepared crust and top with the reserved whole wheat cracker crumbs.
- Cover and refrigerate for at least 2 hours, or overnight.
