2. Lasagna Bombs Directions
- Prepare a homemade spaghetti sauce by sautéing onion, minced garlic, and chopped red pepper with seasonings such as salt, pepper, onion powder, garlic powder, oregano, and Italian seasoning.
- Cook 4 dry cups of Carba Nada fettuccine until al dente.
- In a mixing bowl, combine 1 cup of low-fat cottage cheese with 1/4 to 1/3 cup of fat-free mozzarella and season with some of the same spices used in the sauce.
- Spray an 8-mini loaf pan with Pam cooking spray.
- Start by placing a dollop of sauce to cover the bottom of each mini loaf compartment. Then, add 1/8 of the cooked noodles, followed by a dollop of the cottage cheese mixture spread eve< nly, and top with another dollop of sauce.
- Bake in a preheated oven at 350°F (175°C) for 20 minutes. After 20 minutes, add a little shredded non-fat mozzarella on top and bake for an additional 5 minutes.
- Let rest for a few minutes before scooping out with a spatula.
