- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the almond flour, cocoa powder, erythritol, baking soda, and salt. Mix well to ensure even distribution.
- Add the unsweetened applesauce, egg, and vanilla extract to the dry mixture. Use an electric mixer on low speed to combine until a soft dough forms.
- Portion the dough using a tablespoon or cookie scoop. Roll the dough into balls and place on a baking sheet lined with parchment paper, spacing them 2 inches apart. Flatten each ball gently with your hand or the bottom of a glas< s to form discs.
- Bake the cookies for 10-12 minutes, or until set and firm to the touch. Avoid over-baking to prevent them from drying out.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.
