Preheat your oven to 400°F (200°C) for even cooking and crispy bites.
Shred the zucchini and squeeze out the excess moisture using a clean kitchen towel or cheesecloth.
In a large mixing bowl, whisk together the whole wheat flour, Italian seasoning, salt, and white pepper.
Add the shredded zucchini, egg, fat-free mozzarella cheese, and applesauce to the dry mixture and mix until combined.
Fold in the reduced-fat Parmesan cheese for extra cheesy flavor.
Line a baking sheet with parchment paper and form the mixture into small balls or patties, about 1-2 inches in diameter.
Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy on the outside.
Let the bites cool for about 5 minutes on the baking sheet.
Garnish with chopped parsley if desired, and serve warm.
