2. Baked Scalloped Potatoes with Bacon Directions

  • Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with light spray.
  • In a medium saucepan, melt the light spray over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  • Sprinkle the whole wheat flour over the melted spray and garlic, stirring constantly for about 1 minute to make a roux.
  • Slowly pour in the unsweetened almond milk, whisking constantly to avoid lumps. Continue cooking over medium heat until the mixture thickens, about 3-4 minutes.
  • Remove the saucepan from the heat and stir in 1 cup of reduced-fat shredded cheddar cheese. Season with salt and pepper, stirring until the cheese has melted and the sauce is smooth.
  • Arrange a layer of potato slices in the greased ba< king dish. Sprinkle with crumbled turkey bacon and drizzle with some of the cheese sauce. Repeat the layers until all the potatoes, bacon, and cheese sauce are used, finishing with a layer of cheese sauce on top.
  • Cover the baking dish with foil and bake in the preheated oven for 45 minutes. Then, remove the foil and continue baking for an additional 15-20 minutes, or until the potatoes are tender and golden brown on top.
  • Once baked, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
