2. Baked Scalloped Potatoes with Bacon Directions
- Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with light spray.
- In a medium saucepan, melt the light spray over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
- Sprinkle the whole wheat flour over the melted spray and garlic, stirring constantly for about 1 minute to make a roux.
- Slowly pour in the unsweetened almond milk, whisking constantly to avoid lumps. Continue cooking over medium heat until the mixture thickens, about 3-4 minutes.
- Remove the saucepan from the heat and stir in 1 cup of reduced-fat shredded cheddar cheese. Season with salt and pepper, stirring until the cheese has melted and the sauce is smooth.
- Arrange a layer of potato slices in the greased baking dish. Sprinkle with crumbled turkey bacon and drizzle with some of the cheese sauce. Repeat the layers until all the potatoes, bacon, and cheese sauce are used, finishing with a layer of cheese sauce on top.
- Cover the baking dish with foil and bake in the preheated oven for 45 minutes. Then, remove the foil and continue baking for an additional 15-20 minutes, or until the potatoes are tender and golden brown on top.
- On< ce baked, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
